Fenugreek Bread – Khubz Ruqaq

"Khubz Ruqaq" - Fenugreek Bread

The reported health benefits of Fenugreek are vast, ranging from reducing symptoms of asthma and arthritis, improving digestion and metabolism,  through to hormone regulation, cholesterol balance and diabetes treatment. It’s seeds are a

spice used often in arab cooking. More information on the history and uses of this plant and it’s seeds is available at Wikipedia.


Here’s a useful and rather easy recipe idea:


❖ 450g plain flour

❖ 1 tsp Fenugreek seeds

❖ 1 tbsp salt

❖ water as required


Preparation & Cooking:

1. Sift the flour together with salt and mound it onto your work table

2. Add the seeds and a drop of water

3. Knead the dough adding a little water at a time until you obtain an elastic dough, should take around 15 minutes to come together

4. Dust the dough with a little flour, cover it with a clean dry cloth and leave it to rest for around 30 minutes

5. Divide the dough into 10-12 equal pieces and roll them out into very thin disks

6. Dust each disk with flour and fold in half, place them on a clean dry cloth and cover with another, then set aside again for around 30 minutes

7. Do a kitchen goddess dance :)

8. Gently unfold the disks individually onto baking trays and pop in the oven at 220˚C for 8-10 minutes, slightly less if they are very thin, best to keep an eye on them through the little window, give them a wave!

You can tear pieces off or cut them into strips and serve with some yummy homemade dips! These breads are really good when still warm straight out the oven or handy for lunch boxes the following day. Nom nom nom…
